My vision is to create a unique restaurant in an natural location close to the element with its roots firmly in traditional Japanese cuisine, along with subtle glimpses of more modern gastronomic expressions and concepts.
Drawing on the Omakase and Kaiseki traditions, my focus is on seasonal seafood and ingredients, sourced directly from some of the most renowned boutique producers in Japan, Spain and the UK. Along with the constantly evolving menus, there will always be an innovative couture aspect where bespoke dishes are created to reflect the season, and match the tastes of each individual customer. More than anything else I am interested in the journey and the manifestation that comes from this process.
My concept reflects so many of the influences that have shaped my life. From traditional techniques learned in kitchens across Japan to the contemporary molecular gastronomy of modern Spain. While my love for fashion, film and design have also played their part. I have aimed for simplicity and authenticity in all aspects, from the cuisine to the smallest design details of the space.”
This blog is all about what fascinates and inspires me in life, were I have been to eat, what I am discovering and all the amazing people on my journey as the homeless chef and in the search for a new restaurant.
Its important to protect your dreams as well as this amazing planet. For me it is crucial to protect what you Love and dont let anyone destroy this. I am a creative being and female. Our industry is a very challenging however I want to encourage everyone to not loose there dreams and passion irregardless of what obstacles you may face. What other people think of you is non of your business- you are here for a reason- so live every minute fully and without fear. Love what you do and do it the best that you can because nobody can ever take this from you so protect what you Love.
